Salmon Cobb Salad

Ingredients
4 oz Superior Fresh Atlantic salmon fillet, skinned, qty. 2
6 oz Superior Fresh “Better Butter Blend” Organic Chopped Salad
1 cup cherry tomatoes, halved
1 avocado, sliced
6 oz bacon, cooked and crumbled
4 hard boiled eggs, sliced
1/2 tsp. salt
1/2 tsp. pepper
1 tsp. garlic powder
1 tsp. onion powder
2 tbsp. canola oil
HONEY MUSTARD DRESSING
1/4 cup dijon mustard
4 tbsp. honey
1/4 cup apple cider vinegar
1/4 cup extra virgin olive oil
1 tbsp. lemon juice
2 tbsp. capers
2 sprigs fresh thyme
1/4 tsp. black pepper
Preparation
Mix all dressing ingredients until fully blended, makes about 1 cup.
Cook bacon at 400 degrees for 15 minutes or until done to desired crispiness.
Season salmon fillets with salt, pepper, garlic powder, and onion powder and heat canola oil in a cast iron skillet.
Sear salmon fillets for 4 minutes, flip, and cook additional 2 minutes or until flesh is just translucent.
Plate salad greens and layer on toppings. Top with salmon fillet and honey mustard dressing.
